PIKE PERCH IN A WHITE BEER BATTER COAT


Fine fish gets richer in taste, when it is embraced by aromatic dough. To get a tiny royal update, just follow the castle kitchen’s chef instructions - add some white beer and you will be delighted!

Ingredients

per portion & dough


  • 900 gr. flour
  • 6 pinches of salt
  • 1 pinch of pepper
  • 6 tbsp sunflower oil
  • 12 eggs
  • 1,200 ml KLW

  • 200 gr. Pikeperch
  • 200 gr. Sauerkraut (pickled cabbage)
  • 400 ml. orange juice
  • 80 gr. sugar
  • 200 gr. bacon cubes

Step by step preparation


Batter

1 Separate the eggs whites and yolks.
2 Add a pinch of salt to the egg whites, beat stiff and set aside.
3 Mix the flour with the egg yolks, remaining salt, pepper and Kaltenberg Hefeweissbier/ König Ludwig Weissbier. Stir to a smoothy creamy batter, let it rest for about 10 minutes, then fold in the egg whites.


Sauerkraut (pickled cabbage)

1 Fry the bacon lardons until well done and crispy, then caramelize with the sugar.
2 Reduce the orange juice to 200 ml, add the sauerkraut, simmer for about 1 minute, then add the crispy bacon.


Pikeperch

1 Season the pikeperch with salt and pepper, dip in the Weissbier batter to coat.
2 Now fry in sunflower oil at 180 C for about 5-8 minutes until golden yellow.
